    The Swiss Water decaffeination process

    The Swiss Water decaffeination process uses water to gently remove 99.9% of the caffeine from green beans, while maintaining the bean's distinctive origin and flavour characteristics.

    The Swiss Water Process was originally discovered in the 1930s in Switzerland and is now patented and utilised by the Swiss Water Decaffeination Coffee Company in British Columbia, Canada. The process ensures that 99.9% of the caffeine is eliminated, while leaving the best of the bean behind. They call it 'decaffeinated coffee without compromise'. The Swiss Water Process utilises water saturated with soluble coffee solids, referred to as Green Coffee Extract (GCE), to remove the caffeine from green beans without eliminating any of the soluble coffee components that make up origin characteristics and aromas. When the green beans are placed into the GCE, the soluble coffee components of the green beans are maintained at equilibrium with the coffee solids in the GCE resulting in a net extractive process whereby only the caffeine is removed. This leaves the coffee's unique flavour profile intact.

    The GCE is then moved through a carbon filtration system to remove the captured caffeine molecules, maintaining the concentration level of soluble coffee components, and the green beans are submerged once more. This process continues until the green beans are 99.9% caffeine free. The Swiss Water Process honour the decaff drinker by delivering beans closer in colour to unroasted green coffee and honour the cup by preserving the chlorogenic and amino acids in the bean, which result in better body and flavour.

    Oromia Coffee Farmers Cooperative Union (OCFCU)

    OCFCU (Oromia Coffee Farmers Cooperative Union) was founded in 1999 by 35 small certified organic co-operatives. Its members are indigenous
    farmers located in the vast Oromia State of southern Ethiopia. The farms are located in mountainous, rainforest areas at altitudes of 1500 - 2300
    MASL. The OCFCU achieved Fairtrade certification in 2002, and has since grown to become the largest Fairtrade coffee producer in Ethiopia. The
    union has over 102,000 members.

    Clean cooking gets the (carbon) credit in Oromia

    Oromia Coffee Farmers’ Cooperative Union is based in the Oromia region of Ethiopia – the birthplace of coffee. It has been Fairtrade certified since 2002, with around 90,000 of its members growing Fairtrade coffee.

    Limu coffee is forest-grown, organic and bird-friendly. Producing coffee and living in an environmentally friendly way is important to the members of the co-op. But there are still pressures on the environment, such as deforestation for firewood and the need for new arable land.

    In the Ghimbi region of Oromia, there is a project underway which will help slow the rate of deforestation and tackle that other big challenge to coffee farmers – climate change. Coffee is one of the crops most affected by changes in temperature and climate. As diseases and pests become more prevalent, and patterns of rainfall change, it becomes harder to grow coffee successfully. Rising temperatures affect crop yields. Recent research has shown that coffee yields in the main producing countries are expected to drop dramatically by 2050. This will lead to difficult financial conditions for coffee farmers and eventually, entrenched poverty.

    Oromia is one of the first producer groups to pilot the new Fairtrade Climate Standard. It means 20,000 coffee farmers can improve their living conditions and income, while also becoming more resilient to the effects of climate change.

    Work is already underway to make and distribute 40,000 energy-efficient stoves to 20,000 households in coffee growing communities in the Ghimbi region. These will replace the traditional three-stone fires used in Ethiopian cooking. Every household uses one stove for regular cooking and one to bake injera, a flatbread traditionally made from teff flour. No meal in Ethiopia is complete without injera. The farmers pay for the stoves partly in cash, and partly with the carbon credits that are produced by using the stoves.

    Locally, four production centres have been set up to make and distribute the injera stoves, which has created jobs and additional income for the local community.

    With more energy efficient stoves, women spend less time gathering firewood and can prepare meals more quickly, meaning they have more time for their families and other work. ‘In the old times we had to use so much wood but now a small amount is enough and I can go on with other work of mine,’ says Mulane Jabessa. Mabraat Kabbada, another woman farmer and member of the cooperative, is pleased too: ‘When we used the traditional stoves we had to collect wood every day. Since we use the new and improved cookstoves we only go three times a week.’

    There are also health benefits to the new stoves. They produce less smoke, so families benefit from cleaner air. Mabraat says ‘the old cookstove has lots of smoke and harms our family, causes headaches and eye irritation.’ Mulane feels the new cookstoves are much safer too: ‘The difference is that the old way of cooking burned our legs and hands and our eyes got irritated. This one is much better.’

    The new cookstoves also means less harmful greenhouse gases are produced when cooking. That makes the farmers eligible for carbon credits which can then be sold as Fairtrade Carbon Credits under the new Fairtrade Climate Standard. The reduction on carbon dioxide emissions with the new stoves compared to cooking over an open fire is up to 70%. It’s estimated that the project will generate over 30,000 carbon credits per year. The Fairtrade Premium from the carbon credits goes towards projects which will make the whole community better equipped to deal with the effects of climate change. Mabraat sees belonging to the co-operative as a double win, ‘we received the cookstove through our co-operative and also we are able to market our coffee through the co-operative.’

    Indonesia wet-hulled Arabica is a race against rain. Sumatran farmers wet-hull their coffee because of the humid climate.     Some of the best coffee in the world is grown on the steep wooded slopes of Central Aceh’s highland in Northern Sumatra. The tropical climate, fertile soils and high altitudes of this mountainous region provide the perfect conditions for Arabica coffee.

    This is where Fairtrade coffee farmers of Koperasi Baitul Qiradh Baburrayyan (KBQB) founded their coffee business in 1995.

    Coffee Rooted in Rich Soil is Life – Cultivating Organic Coffee in Sumatra

    The coffee trees, introduced to Indonesia by Dutch colonists in the 17th century, are grown in small family-owned gardens that average one hectare in size. Coffee farming is the main source of livelihood in the area, with around 90 percent of people directly or indirectly dependent on coffee.

    The Fairtrade coffee farmers of Koperasi Baitul Qiradh Baburrayyan (KBQB), located in Takengon and Bener Meriah, founded their coffee business in 1995.

    Comprising 106 villages across two districts, the cooperative and all its facilities are owned by the 7,824 farmer members.

    The farmers of KBQB understand that there are many factors that contribute to a delicious cup of coffee, but they have learned through experience that it all begins with the earth that supports their coffee bushes.

    Not the largest, but the most influential

    KBQB’s experience and professionalism have ensured long-term trading partnerships in the US, Australian and European market. Certified since early 2007, they are selling 100 percent of their green coffee – unroasted beans that have been processed ready for export – as Fairtrade. This makes them one of the most influential co-ops in the area, setting the local reference price in Takengon, and in Fairtrade as well.

    Not only does the co-op adhere to the Fairtrade standards of economic fairness, democratic participation, and transparency. KBQB’s coffee is also produced in an environmentally sustainable way; all coffee is 100 percent organic.

    Farmers are trained on a regular basis and have to comply with all Fairtrade and organic standards to maintain their membership.

    From traditional to professional

    40-year-old Mr. Sobur is a coffee farmer like his father and grandfather. Before he joined the KBQB co-op in 2005, he applied herbicides to the coffee bushes on his plot.

    “At the time, everyone tried it. We didn’t know about the effects of using herbicides. It is a poison. It killed the weed but the coffee trees were also affected; taste and aroma of our coffee changed. Then our chicken died, because they were picking the coffee cherries. We then realised it was affecting our health too,” said Sobur.

    “We used to do coffee farming traditionally, like our forefathers, but now we have become professionals. The cooperative taught us how to do organic farming based on knowledge and skills. This knowledge helps us increase our productivity and quality.”

    Farmers discovered that using herbicides not only destroys weed in the coffee gardens, but also eradicates vital microorganisms, worms and insects in the soil. Herbicide use weakens plant roots and immune systems; and reduces concentrations of essential plant nutrients in the soil such as nitrogen and phosphorous. In the long run it kills the soil, ruins the quality of coffee and reduces the yield of the tree.

    A three-year suspension, an important lesson

    Mr. Syairun, 43 and Mr. Sukri, 42 years old, are coffee farmers on neighbouring one hectare plots. “When we joined KBQB, we learned how to prune properly; regular weeding is also very important. Now it is less costly than with chemical fertilizers and we have doubled our productivity. With organic compost, the coffee grows slowly but has a better quality.”

    But when Sukri’s brother helped out in the coffee garden one day in 2008, a catastrophe happened. The brother sprayed herbicides without Sukri knowing it. Both neighbours were immediately suspended from membership of the co-op for three years and could only sell their production as conventional coffee to local traders.

    “It was very bad, I was so angry with my brother” Sukri says. “And my friend Syairun was affected too. We couldn’t sell our coffee to the cooperative, lost all the Premium benefits and had to wait for three years. Now we protect each other, so we don’t get into trouble.”

    Weeds are not the enemy of the coffee tree

    “We are teaching the farmers that weeds are not the enemy of the coffee tree” says Sahmida, coordinator of KBQB’s Environment Programme. Aided by the Internal Control System (ICS) staff, Sahmida is responsible for the implementation and monitoring of environmental standards.

    KBQB have used Fairtrade Premium funds to buy grass trimmers to facilitate weeding, and farmers have learned how to produce their own organic fertilizer from weeds, tree branches and cherry pulp.

    “Weeds have a lot of functions if managed well. They are essential for strong soil and a healthy coffee garden, weeds provide organic fertilizer. They also prevent erosion and the depletion of soil nutrition; a ‘clean’ soil is prone to landslides.”

    Shade trees shield against landslides

    In recent years, the Central Aceh highlands have been harshly affected by climate change. Since it has been getting warmer, diseases and pests are spreading into higher regions. Weather has become unpredictable with rains getting much heavier. Takengon’s steep slopes have become subject to severe water erosion causing devastating landslides, which make immediate conservation practices necessary. KBQB has invested Fairtrade Premium funds to advance the variety of shade trees for the coffee gardens in a broad research project, nursery and renaturation pilot.

    With their deep roots rooted in rich soils, indigenous varieties of shade trees help prevent landslides. They protect the coffee plants, decrease pests and improve the micro-climate. The new trees are also drought resistant, use less water and grow much faster and thicker than the old varieties. In the past years KBQB have planted 25,000 trees, and are heading for another 40,000.
